Do I need to assemble the oven?
No, the Giotto arrives fully assembled and boxed, ready to use.
Does the Giotto need gas or electricity?
No! The Giotto is a genuine wood fired oven. No gas or power connection required, just wood and a place to put it.
Can it be used indoors as well as outdoors?
Yes. The Giotto is designed for both indoor and outdoor use and is fully waterproof and weatherproof if you do keep it outside year-round.
How heavy is it and can I move it myself?
At 148kg, the Giotto is genuinely portable for its category, but it's still a two person lift. It's ideal for anyone wanting a pizza oven that isn't permanently fixed in place, including trailer or food van setups.
Do I need a stand, or can I place it directly on a bench?
A stand is optional. Choose "No Stand" if you're placing it on an existing bench or surface, or select from three stand styles (Screw in Feet, Bench Stand or Hex Stand) if you need it freestanding.
What clearance does the oven need on a bench?
A minimum of 100mm clearance on the back and sides is recommended, the exterior gets genuinely hot, so don't touch as a rule.
What's the difference between the stand options?
Screw in Feet sits lowest and suits benchtop style setups. Bench Stand offers a mid-height freestanding option. Hex Stand (1060mm) is the tallest, giving full standing-height cooking access without a separate bench.
How long does it take to heat up?
Around 30-45 minutes to reach 300-400ยฐC.
How much wood do I need?
About one 5kg bucket to get started, then roughly one log at a time to maintain heat.
What temperature do I need for different foods?
- 200ยฐC: meats, fish, vegetables, bread
- 300ยฐC: pizzas, focaccia, slow-cooked stews
- 400ยฐC: pizzas
How many pizzas can I cook at once?
Two large pizzas at a time, roughly 2 minutes to cook each.
Is it suitable for commercial or high volume use?
The Giotto is built for regular home and boutique hospitality use (cafes, glamping sites, small venues). For high volume commercial kitchens, Polito's larger Donatello II or dedicated commercial range may be a better fit, worth asking us if you're unsure which suits your venue.
Is the outside of the oven safe to touch?
No, despite being insulated, the exterior gets hot. Treat it as a "do not touch" surface, same rule as any wood-fired oven.
How do I clean it?
Exterior: once fully cooled, wipe down with running water and a cloth. Never pressure wash, it can cause the paint to peel.
Interior: just sweep out ashes once cooled, no cleaning products needed.
Can I repaint it?
No, the Giotto is professionally painted using a drying oven process and isn't designed to be repainted.
Is it certified/tested?
Yes, manufactured in Australia and tested, approved and certified by NATA to strict safety and quality standards.

For large or freight items such as trampolines, pizza ovens, saunas and glamping structures. All deliveries are curbside. Our service does not include unpacking or removal of packaging materials. Please ensure someone is available to receive and sign for delivery.
If your order arrives damaged, contact us within 48 hours of delivery with photos and your order number.

The Giotto is backed by a 5-year structural warranty, covering the oven body against collapse or caving in under normal use, provided it's installed and operated according to the supplied instructions. It doesn't cover damage from misuse, extreme impact, high-pressure cleaning, or normal wear and tear over time. The exterior paint is high-temperature rated and colour stable up to 650ยฐC; minor scratches can be touched up with a matching spray can if needed.

All items must be un-used and in the same original packaging, on delivery.
